We are actually going to be home this weekendit feels like its been forever since we had a weekend to just be home and take care of some things.
Im looking forward to taking care of some of our harvestmy guess is that my time and energy will run out LONG before the veggies do.
First, the tomatoes. . . they have been prolific and we just cant eat them all. You can see in this picture that weve got quite a few to take care of, and I know there are more in the garden just begging to be picked.
We usually make salsabut thats such a long and involved process, its been hard for me to get excited about it this year. Ive got a couple of newer canning books, though, and have found some tomato recipes Id like to try. One is Tomato-Basil Jam. . . its supposed to be fantastic on a bagel with or without cream cheese. But the one Im REALLY excited about is called Bruschetta in a Jarand the reason Im so jazzed about this particular recipe is that YOU DONT HAVE TO PEEL OR SEED THE TOMATOES!! Crazy, I know. But you just chop up plum tomatoes and fill the jars with them, and then pour the hot syrup in to the topthe syrup includes white wine, balsamic vinegar, oregano, and basil, among other things. I think that sounds heavenlynot only the recipe, but also the fact that you just have to chop the tomatoes.
Then, I think Ill give cucumber pickles another tryperhaps Ill end up with the requisite 6 POUNDS of cukes this time instead of 600 GRAMS. (Dont worry, Trevor will be there to supervise my use of the kitchen scale.)
And I think well dig our potatoesIm very excited to see what weve got under the soil. Ill try to remember to take photos of the digging. (Because you and I both know that it wont be me thats doing the digging.)
