Weekend plans

We are actually going to be home this weekend—it feels like it’s been forever since we had a weekend to just be home and take care of some things.

I’m looking forward to taking care of some of our harvest—my guess is that my time and energy will run out LONG before the veggies do.

First, the tomatoes. . . they have been prolific and we just can’t eat them all.  You can see in this picture that we’ve got quite a few to take care of, and I know there are more in the garden just begging to be picked.

Tomatoes

We usually make salsa—but that’s such a long and involved process, it’s been hard for me to get excited about it this year.  I’ve got a couple of newer canning books, though, and have found some tomato recipes I’d like to try.  One is Tomato-Basil Jam. . . it’s supposed to be fantastic on a bagel with or without cream cheese.  But the one I’m REALLY excited about is called Bruschetta in a Jar—and the reason I’m so jazzed about this particular recipe is that YOU DON’T HAVE TO PEEL OR SEED THE TOMATOES!! Crazy, I know.  But you just chop up plum tomatoes and fill the jars with them, and then pour the hot syrup in to the top—the syrup includes white wine, balsamic vinegar, oregano, and basil, among other things.  I think that sounds heavenly—not only the recipe, but also the fact that you just have to chop the tomatoes.  :)

Then, I think I’ll give cucumber pickles another try—perhaps I’ll end up with the requisite 6 POUNDS of cukes this time instead of 600 GRAMS.  (Don’t worry, Trevor will be there to supervise my use of the kitchen scale.)

And I think we’ll dig our potatoes—I’m very excited to see what we’ve got under the soil.  I’ll try to remember to take photos of the digging. (Because you and I both know that it won’t be me that’s doing the digging.)  ;)
