As simple as a BLT

I had a visit from my “egg lady” yesterday. I had been searching for a source of fresh eggs, and couldn’t believe my luck when my dad put me in touch with someone who actually works on the same campus I do.  So I’ve been getting wonderful fresh eggs from her for a couple of months now, and they are SOOOO good!

So when she dropped off this week’s dozen (quite a service!), she mentioned that she was looking forward to having a BLT using her fresh garden tomatoes.

It was like a light went off in my head–I can’t BELIEVE I never thought of that!  I love BLTs!  And I’m always trying to get my tomatoes “put up” somehow because it seems like we just can’t eat that many fresh ones.  But BLTs never occurred to me. . . .

So, last night I stopped on the way home from work and bought a pound of bacon.  When I got home I fried up about half of it, and darling daughter and I feasted on BLTs with fresh garden tomatoes and CSA lettuce.  What a taste experience!

Ok, these aren’t actually the BLTs we had. . . but they sure look similar. ;)
