Last year we went to Mexico over our “spring break”–the last week in February. This year we’re doing it again, and it has made this cold weather much more bearable for me, knowing that we have that to look forward to in just a few weeks.
During our trip last year we had fresh guacamole, and wow, was it fantastic! I’ve always liked guacamole but had never been a huge fan–but this stuff was amazing! Lots of onions and garlic, and of course the freshest tomatoes and avacadoes.
So this past weekend, Trevor got an itch to recreate that wonderful Mexican guacamole.
He just pretty much winged it–we had some avacadoes and tomatoes (which we often have on hand because we eat lots of salads), and of course onion and garlic and lime juice.
It turned out quite well.
