Our tomatoes really have started producing with a vengeance–they are extremely late this year, which is no surprise, but they certainly are making up for it in sheer volume.
We’ve got a yellow tomato plant (Lemon Boy) that is particularly productive–we picked tomatoes three days ago and this is what I got out of the garden again last night.
I really need to get my act together and make something with them before they go bad–if I don’t have time for canning a batch of salsa, I can always just make spaghetti sauce and then freeze it in my Ball freezer “jars”. But I think at this point it’s going to have to wait until Monday–we’re leaving for the lake today right after work and are planning on coming home on Sunday evening (I work on Monday).
Maybe I can get Trevor to blend all the tomatoes before I get home from work on Monday–then it will just be a matter of throwing in the rest of the ingredients (onion, pepper, basil, oregano, etc.) and putting it into the freezer containers.
I hope you have a long weekend and don’t have to come back to work on Monday like I do. Although at least there’s never any traffic on my drive to work on Labor Day. 😉
